Pepper's Easy Baked Salmon and Sweet Potato Mash
WHAT YOU NEED:
Fillet of Salmon
(size up to you depending on how many people you want to feed)
Lee Kum Kee Oyster Flavored Sauce
(look for the panda in the Asian section of your local grocery store)
Sweet Potato (a large one can feed 2)
Butter
Milk
Salt and pepper
WHAT TO DO:
Preheat Oven to 450 degrees
Take fillet of salmon, wash and place in foil covered baking pan
Pepper fillet to your choosing or leave out this step if you're not into pepper
Spread the oyster sauce evenly on top and sides of the salmon
Place in oven for 10-15 minutes. Check at 10 minutes
If there a few burned spots of sauce on the salmon and sides that's okay. You can lift them off later. Just make sure that the salmon is cooked all the way through. If unsure you can cut a bit down the middle. If you over cook the salmon it can get a bit dry so be careful.
Once out of the oven, portion off pieces with knife and use a spatula to lift the salmon up from its skin. The skin should stick to the foil, leaving you with a perfect piece of tender salmon to lay on top of sweet potato mash.
While the salmon bakes start on the sweet potato(s) by washing and poking holes
Wrap it up in a paper towel and put in microwave for 5 minutes
You can tell the potato is done if it cuts in half easily and is ready for mashing If not, wrap it back up and put it back in the microwave for a minute or so longer
Once the sweet potato is ready, cut it in half and scoop it from the skin and place in mixing bowl.
Add a bit of butter, tiny bit of milk and a dash of salt. Mash up with fork or masher.
For presentation, add a dollop of the sweet potato mash and place a section of salmon on top.
Serve and enjoy!
