SHRIMP TACOS WITH SPICY MANGO SALAD

I was fiending for some spice on a hot summer night and this recipe hit the spot - spicy and refreshing at the same time!

Ingredients:
1 lb (400g) Shrimp/Prawns defrosted cooked shrimp
Corn Tortillas
Jalepenos (Green chillis) - quantity depends on how spicy you like it
4 limes
2 mangoes - diced
Spring Onion - sliced
2 cloves of garlic
Cherry Tomatoes - halved
1/4 cucumber - diced
Bunch of fresh cilantro (coriander)
pinch of cumin

Throw the diced mangoes, spring onion, cucumber, cherry tomatoes and a finely chopped jalepeno chilli into a bowl. Add about 1/4 cup of chopped cilantro.

Squeeze juice of 1 lime and season with salt and pepper. The mango salad is finito!

Place the shrimp in a bowl and squeeze juice from two limes onto it. Add pinch of cumin, salt, pepper and a good splash of hot sauce (I used Tapatio). Sautee onions, jalepeno and garlic in a little oil and add the shrimp. Cook until the shrimp are heated through.

Serve on hot tortillas with cheese, guacamole and salsa!
