SPICY TOFU & VEGETABLE STIR FRY
This is a simple tofu and vegetable stir fry with a fiery kick! Although this dish is vegan/vegetarian it is delicious enough to satisfy everyone!
Ingredients:
1 block firm tofu
Asparagus
Red peper
Bunch of spring onions (scallions)
2 tbsp vegetable or sunflower oil
For the marinade:
1/2 cup fish sauce or soy sauce if veggie
1/2 cup rice wine
1/4 cup brown sugar
Splash of rice vinegar
1-2 small diced green onion
2 tbsp of chili paste (I use Vietnamese chilli/garlic paste)
2 cloves crushed garlic

Firstly take the tofu and cut it into thin triangles, or any shape you like. Take the cut pieces and place on a woven towel and press firmly to squeeze out any excess water. Dont crush the tofu into mush though! Put slices in dry non-stick frying pan, with a medium heat. Firmly press them as the cook to squeeze out the water. Cook until golden brown on both sides. Let it rest until room temperature.
Mix up the ingredients for the marinade and mix in the cooled tofu and leave to absorb the flavours for about an hour.
After the tofu has marinaded, heat up the oil in a wok or large frying pan until smoking. Throw in vegetables and slowly add the marinade until there is a sauce at the bottom of the pan and all the vegtables are coated. Cook until vegatables are tender.
Serve with rice. Yum! If you woould like to make this dish more meaty - substitute the tofu for chicken or thinly sliced beef.
