SAUSAGE PUFF PASTRY
Get ready to make my Trouble-free "Sausage, Peppers and Onion Puff Pastry with a Spicy Roasted Red Pepper Sauce." This recipe sounds fancy but it is actually pretty easy to make! I use store bought ready made ingredients to help speed things up and make a delicious dinner on a weekday!
Ingredients:
4 sausages (I used mild Italian sausage)
2 Peppers thinly sliced (any colour)
Half red onion thinly sliced
3 cloves of crushed garlic
1 tsp of chopped fresh sage
Handful chopped fresh basil
1 1/2 cups of grated cheese (mozzarella or cheddar works best
1 sheet of ready rolled puff pastry
1 beaten egg
Splash of milk
1 slice of day old bread (use food processor to turn into breadcrumbs)
4 ready roasted red peppers
1 tsp crushed chilli flakes
3/4 cup heavy cream
Salt & Pepper
Olive Oil
Preheat the oven to 325F. Sautee the peppers, 2 cloves of crushed garlic and the onion in a little olive oil. Season with salt and pepper. When the onions become translulcent remove from the heat and add the chopped herbs. Allow this mixture to cool for a few minutes.
Next remove the sausage from its casing and place in large bowl. Add the breadcrumbs and the peppers and onion to the sausage. Mix throughly with your hands.
Wash your hands. Grease a large baking sheet and unroll the puff pastry onto the baking sheet. Using a sharp knife gently (do not cut through the pastry just use the knife to mark it) divide the puff pastry lengthwise into three equal sections. Then take the knife and cut through pastry this time and make diagonal lines on the two outer edges.
Fill the middle with sausage mixture. Then add grated cheese on the top. Next overlap strips from each side over the middle - like your are plaiting/braiding. Make sure to pinch the two ends so that the mixture doesn't leak out. Add splash of milk to beaten egg and brush over the pastry. Bake until golden brown, approx. 30 mins.
Put the roasted red peppers in the food processor with the last clove of garlic and a glug of olive oil. Blend until smooth. Transfer into small saucepan. Place on low heat and slowly add the cream and stir. Add crushed red pepper flakes for a bit of spice!
When the sausage pastry is ready, leave to cool for a few minutes before cutting into portions. This recipe serves four LARGE portions! Don't worry if some cheese and fat has oozed out. This will happen depending on how fatty the sausage is and how tight you have woven the pastry.
Voila! Serve with fresh salad! I served this with a spinach, tomato, basil and cannellini bean salad.
