VODKA WATERMELON WITH MINT
Last summer I posted an intoxicating watermelon recipe using a whole melon and a fifth of voddy! This year's watermelon cocktail has a little more sophistication - it's called only using half a melon and adding mint!
Ingredients:
Half a watermelon
1 cup of vodka
2 fresh mint sprigs
How to do:
Cut a watermelon in half. Using a melon baller or a teaspoon scoop out all the melon flesh of half the melon and put in large bowl. Pour the vodka into the bowl with the watermelon. Finely chop up the mint and mix gently with watermelon balls. Using a sharp knife carefully cut zigzag pattern around the watermelon rind to make it look fancy! Put the melon back into the watermelon shell. Chill for at least 2 hours before serving.
If you are taking this melon to the beach or a picnic you can freeze the melon before leaving the house. This will provide an icy treat to refresh your friends while you enjoy fun in the sun!
