CHICKEN POT PIE - CAMPING STYLE

Camping doesn't mean you have to skimp on cuisine. Here is an easy and delicious recipe that will fill the bellies of you and your camping mates!

Ingredients:
6 chicken breasts
3 tablespoons olive oil
salt and freshly ground black pepper
5 cups chicken stock, preferably homemade
2 chicken bouillon cubes
12 tablespoons (1 1/2 sticks) unsalted butter
1 leek thinly sliced
3/4 cup flour
1/4 cup heavy cream
4 cups of mixed frozen vegetables (peas, carrots, sweetcorn, green beans)
1 1/2 cups frozen pearl onions
4 cloves crushed garlic
2 tbsp tarragon
1 tsp sage
1/2 lemon - zested

You will need to prepare the filling before you leave on your trip. believe it makes it easier than carrying a load of ingredients with you. First off, sautee the cubed chicken in a little olive oil. Becareful not to overcook. Once cooked remove from heat and set aside.

In a small saucepan, heat the chicken stock and dissolve the bouillon cubes in the stock. In another pot, melt the butter and saute the leeks over medium-low heat for 10 minutes, then add the garlic and cook for another 5 minutes. Add the flour and cook over low heat, stirring constantly, for 2 minutes. Add the hot chicken stock to the sauce. Simmer over low heat for 1 more minute, stirring, until thick. Add 2 teaspoons salt, 1/2 teaspoon pepper, and the heavy cream. Next add the chicken, frozen veg, pearl onions, tarroagon and sage. Mix well.

Remove from heat and allow to cool thoroughly. Once cooled spoon into ziploc bags or tupperware and freeze. Take frozen food and travel with cooler to your camping destination!

You could make fresh biscuit dough and wrap them in cling film and take them in cooler. Or you do buy those ready to go biscuit dough packages - which is a lot easier for camping. I went for mini flakey buttermilk biscuits. I got the mini size because it is easier to divide into many portions for all my hungry campers!

Don't forget to take your dutch oven with you and some charcoal too!


When you're ready to WOW your camping buddies with this delightful pie..start up the fire and get those coals going. Empty the frozen chicken filling (you can defrost it beforehand too if you have time) into the dutch oven pot.

Once the coals are ready place the dutch oven on them or on a grill. Heat up the chicken filling. Give it a stir once and a while to make sure everything is defrosting evenly.

Once the chicken is fully heated and simmering. Get out them biscuits and place gently on top of the chicken.

Once the biscuits are in, put the lid on and place hot coals on top of it. This will cook the biscuits and make them lovely and golden brown. We didn't have the right tools and had to use a hatchett and plank of wood to get the coals on there!

15 minutes later...the biscuits were cooked! Voila! Chicken pot pie with buttermilk biscuit top to be eaten out in the wilderness.

The pie was completely devoured and everyone had seconds too! It was a welcome alternative to the hot dogs, which we ate with every meal that weekend!
