HALLOWEEN PUMPKIN CHOC CHIP MUFFINS

Its the season of pumpkins and sweets. Bake some pumpkin muffins and the aroma will have you feeling festive in no time! You also will make alot of mates as they muffins will have them coming back for more...

Ingredients:
•2 1/2 cups pumpkin puree (tinned is fine)
•3 eggs
•2/3 cup of shortening or unsalted butter
•2 1/2 cups plus 2 Tbsp sugar
•2 tsp each cinnamon, nutmeg, allspice, cloves
•1/2 tsp salt
•3 cups all-purpose flour
•2 tsp baking powder
•1/2 tsp baking soda
•1 1/2 cups semisweet chocolate chips (or more if you desire)
1/2 cup chopped toasted pecans

Preheat the oven to 350F. Cream together the sugar and the butter. Then add the pumpkin and eggs. Next add all the dry ingredients: flour, baking powder, baking soda and spices. Whisk together gently until thorughly mixed through.

Line the muffin tin with baking cups. Try using spooky Halloween themed ones! Pour the batter into the muffin tin, filling them to the top. Bake for 30 mins or until a toothpick comes out clean.
